Hi, Reader, Happy weekend! Here we are half-way through May already (I almost wrote April). Time is going fast right now! There's been so much happening lately. There's a lot of growing time still left! ๐ฏ My Favorite Honey RecipesHoney is a mainstay in my pantry. I often get a giant gallon jar of it at the farmer's market, and just work my way through it a little at a time. Since raw honey seems to be a little less stable, I do find that it crystallizes quickly, which is part of why I like to use it up quickly (or just accept that I'll need to melt it back down every once in a while). Below, you'll find some fun infusions and more to add a little extra sweetness to your life. Enjoy! โHow To Make Whipped Honeyโ One of my favorite projects? Making whipped honey. You need *just a little bit* of gritty, crystallized honey to help the liquid honey set. Then, you end up with this creamy, marshmallow-like honey and all that aeration makes it taste even better. P.S. I like to make FLAVORED whipped honey, too! Hi, Reader, Do you grow any herbs? I'll be honest - I wasn't that interested in them when I started gardening 11 years ago. I usually focused on basil and cilantro since you need those for pesto and salsa! But over the years, I've added more and more.
